- 2 large, boneless, skinless chicken breasts (1.5 pounds total)
- 1 Tbsp. extra-virgin olive oil
- 1/2 cup chopped onion (1 small)
- 1/2 cup chopped bell pepper (any colour or combination of colours)
- 2 cloves garlic, finely minced
- 2 Tbsp. tomato paste
- 2 tsp. Italian seasoning
- 1/3 cup white wine (any variety)
- 1 can (14.5 ounces) of diced tomatoes
- Salt and pepper to taste
Step 1: Set the broiler to high heat. Place a small, heavy-bottomed skillet in the oven and set the broiler.
Step 2: Arrange chicken breasts on top of the pan so that if they slide one at a time into the oven, they will not touch the bottom of the pan. Be careful!
